Open a thread there saying what you’re trying to do, and ask for hosting and for technical help if you need that.
Just use a text editor. I use Emacs org files but that’s just me.
I guess I don’t understand the issues you think you’re facing with straightforward approaches. You probably don’t want it on an internet server, right? Maybe just scrounge an old laptop with no internet connection and set it up with an encrypted disk. Then use it as your journalling box. So you’re fairly safe from network attacks. You might have to worry about someone snagging the laptop itself and recovering the key somehow. Yes there are approaches you can take to mitigate that. I don’t know of any super simple ready made methods though.
Command line mplayer seems fine to me. I have it aliased to “m” for convenience. Playlists work great (just make a shell script to play the songs you want). Need help getting to sleep? Shell script that sets the volume to barely audible, then plays some long instrumental audios. And so on.
Maybe you could try a prepaid credit card from a store.
You’re asking a support question for a provider that most of us here have never heard of. I’d wait a day or two and then maybe open a ticket with the provider.

I remember having to puzzle over the borg documentation a little when I started using it, but I don’t use any tools. I just have a couple of aliases in my .bashrc and that seems like enough.

I don’t see a plus. It says “FreeOTP version 2.0.6 (48) © 2013-2023 - Red Hat Inc, et al”. But I think I’ve gotten updates more recently than 2023.
I’m using FreeOTP from F-droid and imho it suffices if you’re going to use a phone app at all. The ability to back up OTP keys in principle defeats the concept of 2FA but it’s hard to live without, once you have enough keys. The thing about retain last N backups is hard to enforce without special arrangements in your backup scheme.
I have found gitit easy to install and use though not all that featureful. It uses git as a backing store and there is an apt package for it (apt install gitit).
I’ve never heard of any of those. No description of what they are for but they mostly look video related. Ffmpeg and mplayer have sufficed for me so far, but who knows.

I use pandoc to convert the epub to a .txt file and read it with emacs or “less”. There are much more efficient ways to do the conversion but I haven’t bothered scripting one.

Yes they separate out renewal prices so make sure to take that into consideration. The high renewal prices are a marketing trick of the TLD holders. The resellers can’t really do anything about them.
generally, use “netstat -lpn | grep 8080” (or whatever port number) to find out what process is already listening on that port. This kind of thing happens all the time.
I’d DIY it (maybe with FreeNAS, about which I know nothing) instead of buying a proprietary NAS in a box. What’s the point of self-hosting if you’re going to be at the mercy of someone else’s software anyway? If you’re DIY’ing, there are 3.5" drive enclosures with soundproofing stuff in them that should keep the drive pretty quiet. Or if you can afford enough SSD’s for your storage requirements, then use those.
